Got some catching up to do
I’ve been enjoying a few good beers lately, but with the scheduling of things, I’ve got paper notes and that’s about it. I’m (I think) four reviews behind. I’ll get caught up by the weekend. I’m two deep into the Belgian beers so far, and let me tell you, if they keep going this way I may have to buy a plane ticket to Europe!
I tasted the vanilla porter in the conditioning carboy. It’s a good news/not good news scenario. First, the good news is that I get no sour or off flavors of any sort. I was a bit worried about that. the not good news (as opposed to bad, which it isn’t) is that I also taste almost no vanilla. Four vanilla beans priced like a precious metal and I got nadda. I have two beans left, but I may just get a good quality vanilla extract and play with that. More good news, the “other” porter flavors are rounding into shape. Even with a bit of a screwup with the mash, I should have a good beer to drink. I’ll give it another try with better temperature control another time.
I also swirled the yeast sediment back into the ESB bottles tonight. I want to get the yeast back into suspension for a bit to try and kickstart carbination. I need to see some progress in the next week.
