ESB is looking good
I racked the ESB out of primary into a carboy tonight. I took the OG reading at 130 degrees, so I don’t have a very reliable reading there. It was too hot for my conversion charts. My reading tonight was 1.012. My guestimate is about 4.5% ABV. None of that matters a bit if it tastes bad, but it didn’t. It really tasted good. Well, good for a reading out of the primary fermenter. It will make good use of the couple weeks I leave it in the carboy. It needs to calm down a bit. It should be plenty malty and quite bitter. Sounds good to me!
The Pale Ale went nuts the other night and I about had a volcano in the middle of the night. I woke up yesterday morning and saw that a bit of junk had come up through the airlock. Not much, but I couldn’t have been too far from a problem. It also got quite warm - about 76 when the ESB right next to it never got above 73 that I saw. I’ve got the same yeast going into my next beer - the California Ale Yeast WL001. The homebrew guy didn’t think I’d have any issues with those temps.
As for the next beer, I’m going to do a vanilla porter. I’ll probably mash it up this coming weekend. then it’ll be time for a period of inventory reduction. With any luck, I can give some of these away. Fingers crossed.
